We don't currently specify Apache or IIS as requirements, but it is generally out of scope to provide web server configuration guides.

There is nothing specific about running Piwik under lighttpd, cherokee, etc. I'm running Piwik under both, lighttpd and Apache - there is no special configuration required.

If you want, feel free to write a Wizard for Cherokee!

its not the configuration. Cherokee allows to install tools e.g. joomla, drupal etc. directly via the admin-console. The selected tools will be installed automatically in the specified directory. Its something like SAS...

I sent an email to the project and asked them to include piwik to their service.

Thanks for the clarification.

Please follow-up with the cherokee project and let us know if there are any special requirements. For example, in #642, we added special files to the package to make it installable from the IIS management console.
